Vegan Peanut Butter Cookies

Steps
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter, brown sugar, vanilla extract, baking soda, and salt. Mix well until smooth.
- Gradually add in the all-purpose flour, mixing until fully incorporated.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Flatten each cookie slightly with the back of a fork, creating a crisscross pattern.
- Bake for 10-12 minutes or until edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
