Steps
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the gluten-free flour blend, baking soda, baking powder, and salt.
- In another bowl, whisk together the brown sugar, melted coconut oil, and vanilla extract until smooth.
- Combine the wet and dry ingredients, mixing until just blended.
- Fold in the vegan chocolate chips.
- Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, until edges are golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
