Steps

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the gluten-free flour blend, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the brown sugar, melted coconut oil, and vanilla extract until smooth.
  4. Combine the wet and dry ingredients, mixing until just blended.
  5. Fold in the vegan chocolate chips.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes, until edges are golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
