Steps
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine rolled oats, almond flour, brown sugar, baking soda, cinnamon, and salt.
- In another bowl, mix melted coconut oil and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until combined.
- Fold in the raisins.
- Drop spoonfuls of the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until edges are golden brown.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
